The big news this week is that our Copper Ale will be on tap at the Del Mar Fair! This
year there will be a microbrewery plaza in the Paddock Area featuring 13 different
breweries. We will also have a booth with hats, t-shirts, coasters and historical
information on Ballast Point (the landmark) as well as the brewery and brewing process. So
when you go to the fair, be sure to drop by and say hello.

PUB UPDATES
The tentative date for the new Carlsbad Pizza Port to open is this Sunday,
June 15th. Expect that to happen a few days late though due to the late
delivery of their new pizza oven. The beers are set to go so they will
open with a full tap list. Be sure to look for the new oatmeal stout.
YEAST REPORT
Paul and I have finally broken into that Pale Ale we brewed 6 weeks ago
with all the different liquid yeast.
The Irish Ale is quite good. Medium Attentuation with high flocculation.
A slight hint of diacytel is very nicely balanced by a good fruity
character--though more subdued than the English
The British Ale is similar to the Irish, but perhaps even a little bit
sweeter and milder. This is a very good yeast for any Bass-type pale ales.
This is a limited time only strain by White Labs, the others are now
year-round.
The East Coast Ale is very neutral. Medium Plus attentuation and
flocculation. It is a good choice for lager-type beers and any beer where
low-esters and yeast flavors are desired. I bet it would make a killer Alt
Beer. An ideal coice for pub ambers and American ales
The California Ale and English Ale were both good as well. The English is
the most fruity and the sweetest. Great for London style ales. The
California is dry and accents the hops well. Still the classic American
pale ale yeast.
Try a new yeast in a proven recipe and see if you can pick up on the
differences in flavor.
RECIPES
Summer Amber
This is a light amber beer that has some crystal malt, but not too much to
make it heavy. The Caravienne and 60L give it a hint of caramel flavor.
The East Coast Ale yeast will keep the flavor clean and the esters low
during our coming heat waves.
6.5# Pale Malt Extract
1# Honey - Boil
.5# Caravienne
.5# 60L Crystal
1.25 oz Spalt 4.2% AA - Boil
.75 oz Spalt - Finish
East Coast Ale Yeast
Spencer's Nectarine Mead
So named for my friend Spencer who does not drink but enjoys making mead to
share with his friends in the SCA. He called today and told me that
Ralph's has nectarines on sale for $.39/lb--a very agreeable price. Last
year I used about 4# and flavor was mild. This year I plan to double that
and see what happens. Either way, the mead was great. The nectarines
blend effortlessly with the slight citrus flavor of the orange blossom
honey.
14# Orange Blossom Honey
4-8# Nectarines (slice up and steep)
2 packs Cote Des Blancs Yeast
No nutrients needed on this one. I bottled it at 4 months and it was very
drinkable. I soaked the sliced nectarines in a steeping bag with the honey
after the boil for about 20 minutes and then strained them out. After that
I pressed the remaing juice out the pulp and threw that in as well.
Primary for 3-4 weeks and age in secondary for 2 months.
